Hotel Menu Planning

We will be FL bound in about two weeks!  My husband has a conference in Orlando, which just so happened to fall on my son's Fall Break from school.  It was meant to be, I tell ya!  God knows we need a small vacation.

We will have a couple days to vaca as a family, and then my husband will be at the conference from Wednesday through Friday.  That means me and the kids hitting the hotel pool and venturing across the street to Downtown Disney by ourselves during the days he's busy.  As we are on a budget, I have the challenge of cooking meals for us in the hotel room, which has a small fridge and coffee maker but no microwave.


I will be bringing our rice cooker (because my kids have to have rice) and my crock pot.  I've been researching crock pot recipes as I don't really use mine that much at home.  Dinners at our house are usually baked/broiled/grilled chicken breast, fish, or some type of lean protein, steamed veggies, or soup.

I've found a couple "5 ingredients or less" crock pot recipes and am really excited to try them out - French dip sandwiches and BBQ Ribs.  My third recipe is something that I used to do as quick dinners (before we started eating a little more healthy.)  It's cream of mushroom soup, onions, and pork chops or skinless chicken thighs.  I just throw it all together and bake it in the oven, but will attempt to throw it into the slow cooker in Florida.

If only we had a kitchenette in our room, it would be so much easier.  But in a weird way, I'm excited about the challenge of cooking meals without my usual tools.  I hope it's a success!  If you have any easy crock pot recipes, please do share!  I'm still trying to figure out what to do for breakfast since my kids are not big cereal eaters.  If you have experience with cooking/meals in a hotel room without a stove or microwave, any tips would be greatly appreciated.  Thanks!

  1. How's your trip? Wish I could help in this area but I rarely use my crock pot. The only time that we've actually used it to cook (besides as a heating/warming tool) is to make beef stew. My one hesitation is leaving it unattended. I would love to use mine more often. If you found recipes that turned out successful, please share =)
